- 2kg rolled loin pork
- 1 cup hot water
- 3 tbsp oil
- 2 tbsp salt
- Pre heat camp oven.
- Rinse pork skin with hot water to open the pores of the fat.
- Thoroughly dry the skin with paper towel.
- Rub oil over the skin and massage salt into the skin.
- Place pork onto trivet and into camp oven.
Cooking with fire method:
Use a small shovel full of coals on the bottom and a large shovel full on top. Place a lot of coals on top for the first half hour to create the crackling. You can then slow cook the pork with less coals on top after skin has crackled.
Cooking with BBQ beads method:
If using heat beads in a 12 inch camp oven, we use 8 to 10 on the bottom and 16 to 20 on the top, depending on wind conditions. If it's quiet windy you would use more.
Hint: Check the pork about 20 minutes into cooking, to ensure you aren't burning the crackling. If the crackling is starting to burn in the centre place coals or BBQ beads to the outside of the oven and continue cooking.
Cooking times for meat is similar to a conventional oven, for every 500gms of meat times it by 30 minutes.
